Firm, full-bodied and low in fat (*). These are the three qualities of this innovative recipe that has completely revived the art of smoking salmon. While the production techniques remain secret, you should know that Souhoï® salmon is aged for longer than other smoked salmons. The fat is gently removed for three weeks, and the result is a texture that's almost like confit. It's delicious, it's unique...it's Petrossian! Souhoï® is presented on a wooden slab that serves as a cutting board. Approximately 120g. (*): Souhoï® contains 3.7% fat, while classic smoked salmon contains more than 9% fat.
