      The difference is both visual and in taste.

      Wild salmon has a pale beige colour, while farmed salmon is pink-orange.

      Baltic wild salmon feeds on pelagic fish such as herring and sprat. This diet gives it a very light, slightly pink flesh, earning it the nickname “Blond of the Baltic.”

      For the same reasons, Baltic wild salmon has a more pronounced flavor than farmed salmon, with toasted notes and a slightly saltier mouthfeel.

      The colour of farmed salmon results from a carefully controlled diet, ensuring a consistent balance of flavor.

      Wild salmon, by contrast, may vary slightly in colour and taste depending on its life cycle.

      Note that Petrossian salmon adheres to strict specifications, including a GMO-free diet and analytical monitoring for heavy metals, PCBs, and dioxins.u

    • What is the country of origin of your salmon ?

      Our farmed salmon (sliced and in Coupe du Tsar®) comes mainly from Scotland, but may occasionally come from Norway depending on fishing and local weather conditions.

      Regardless of origin, all fish farms are carefully selected to ensure strong sea currents and strict compliance with Petrossian’s quality standards.

      Our wild salmon is caught in the Baltic Sea, in a fishing zone stretching from Poland to Finland (excluding Russian territorial waters).

    • Which salmon should you choose?

      If you enjoy a milder and more balanced taste, farmed salmon remains a safe choice, especially for dinners bringing together guests of all ages.

      If you are looking for a salmon with a more pronounced flavour for a tasting among enthusiasts, we can guide you towards wild salmon.

    • How to serve and enjoy salmon ?

      We recommend taking the salmon out of the refrigerator 5 to 10 minutes before serving. Salmon is delicious on its own and can be enjoyed plain or on toast. We advise against serving it with lemon juice, as it alters the appreciation of its flavour. To add a tangy touch, we suggest pairing it with a dill cream, to which you can add a hint of lemon.

    • How long does salmon keep?

      Salmon can be stored in the refrigerator for up to 3 weeks, provided it remains in its vacuum-sealed packaging. Once opened, it should be enjoyed within 24 to 48 hours, kept in a closed container in the refrigerator.

    • Can I freeze salmon?

      Farmed salmon can be frozen unless otherwise stated on the label. Wild salmon, however, cannot be frozen. As freezing is mandatory for wild fish intended to be sold raw or cold-smoked for sanitary reasons, wild salmon has therefore already been frozen.

    • Can I eat your salmon if I am pregnant?

      As a precaution, we do not recommend that our pregnant customers consume raw or smoked fish. However, we can suggest our wild salmon roe or our taramas, which have been pasteurized.

      Unopened, caviar can be kept in the refrigerator at 0–4 °C (32–39 °F) for about one month.

      Once opened, it must be consumed within 24 hours, and stored in the fridge.

      Caviar should never be frozen, as it would alter its texture.

    • How should caviar be served?

      Caviar should be enjoyed using a special spoon (also known as a "palette") made of mother-of-pearl, stainless steel, or hardwood. Silver is to be avoided, as it can oxidize and alter the taste of the caviar.

      We deliver exclusively within mainland France, Corsica, and countries of the European Union. For deliveries to Switzerland, Belgium, and the United Kingdom, we invite you to place your order through the dedicated e-shops:

      Any order placed from Monday to Friday before 10 a.m. will be delivered within 24 to 48 hours for delivery in mainland France. For orders to Corsica and European Union countries, the delivery time is 48 hours. For more information, please visit our “Delivery” page.

    • How can I track my delivery?

      Once your parcel has been handed over to the carrier, we will send you a first email containing its tracking number. You will then be kept informed by email about the progress of the delivery.

    • How does the delivery work?

      All our parcels are handed over in person and in a discreet package (without any mention of the brand or its contents). It is therefore essential that the recipient is present on the day of delivery. A phone number is required so that the delivery person can notify the recipient before arrival.

    • Is the cold chain guaranteed during the transport of fresh products?

      All our fresh products are shipped in insulated packaging and kept at the appropriate temperature throughout transit thanks to refrigerated containers. The presence of thermal probes alerts us to any temperature variations during transport. Therefore, we can guarantee delivery without risk of cold chain interruption, regardless of the outside temperature. However, products must be promptly refrigerated upon receipt of the parcel.

    • A product is missing from my parcel, what should I do?

      In case of stock shortages, our Customer Service will contact you before shipment. However, if you notice a missing item without prior notice, please call our Customer Service at +33 (0)9 70 70 59 11 so we can quickly find a solution. Some large orders may be shipped in multiple parcels. In such cases, the carrier will deliver all parcels in one delivery. If this is not the case, please contact our Customer Service.

    • What should I do if my received parcel is damaged?

      If you notice that the parcel is damaged upon delivery in person, we advise you to refuse it. If this was not possible, please take photos of the parcel and send them to our Customer Service along with your order number.

    • What payment methods are accepted?

      You can pay for your order by credit card (Visa, Mastercard, and American Express) through our secure platform. For payments by check, please contact our Customer Service team. We do not accept bank transfers.

    • Is the payment for my order secure?

      Our website is fully secured, and a security code (called “3D Secure”) is systematically required for every transaction.

      Payment for your order is processed as soon as your order is confirmed. You will receive a confirmation email with your invoice attached.     • What is the country of origin and composition of your products?

      All our smoked fish are produced in France and prepared in our traditional smokehouse in Angers. Our fine grocery products are mostly crafted in France, with a smaller portion coming from Europe and Armenia. You can find the country of origin and composition of each product in its description by clicking on the “More information about the product” link. Petrossian does not sell any products originating from Russia.

    • How should your products be stored?

      Foie gras can be kept in the refrigerator for up to 3 weeks before opening. Taramas and koshka can be stored for up to 6 weeks in the refrigerator before opening. For each product, you will find storage conditions in its description by clicking on the “More information about the product” link.

    • How to recycle your packaging?

      Following the Grenelle Environmental Forum, the common Triman symbol came into effect on January 1, 2015. Its purpose is to inform consumers about the recyclability of packaging or the products themselves. As our packaging is subject to sorting instructions, Petrossian applies the Triman logo on most of its packaging. This logo is intended to help consumers distinguish between recyclable and non-recyclable elements. In case of doubt when sorting your packaging, you can refer to this logo.
