Description

An iconic name, a unique character. Beluga Royal caviar has a distinctive profile that cannot be found anywhere else, thanks to its characteristically large, soft eggs that range from light to dark grey in colour. The complex flavours and length of finish are what makes it a very exclusive gift we can ever give. These are not just eggs, but a little bit of magic harnessed in one mouthful.

How to enjoy caviar ?

Less is more! Caviar is best enjoyed on its own for an introduction, or simply on lightly buttered toast or blinis.

How to serve caviar?

Caviar is best enjoyed with a spoon (also known as a "palette") made of mother-of-pearl, stainless steel, or hard wood. Silver should be avoided to prevent any oxidation. To complement your tasting, discover our selection of caviar serviceware.

Which caviar should I choose for a first tasting?

Ossetra caviar? Baïka® Baeri? Sevruga Steluga®? Daurenki® or Beluga caviar?

To explore our different caviar types and find the one that suits your first tasting experience, we recommend reading the article Which Caviar to Choose?, which guides you through the unique characteristics of Petrossian caviars.

What recipes can I make with caviar?

You’ll find a variety of caviar recipe ideas on our blog.

What should you drink with caviar?

The pairing of white vodka and caviar is an obvious choice — a perfect match in the purest Russian tradition, especially suitable for strong or briny caviars like Baïka®, Sevruga, or Ossetra Royal.

For milder caviars like Beluga, Daurenki®, or Ossetra Impérial, we recommend a lightly dosed champagne or white wines that offer a balanced mix of acidity and maturity to awaken the palate and let the roe release their subtle marine flavors and delicate notes of dried fruits.

Contrary to popular belief, non-dosage champagnes (brut nature) should be avoided, as their sharpness can overpower the caviar.

Can I eat caviar if I’m pregnant?

As a precaution, we do not recommend that our pregnant customers consume caviar.

However, we can suggest pasteurized alternatives such as our taramas or koshkas, including caviar tarama or our wild salmon roe.

The Chef’s Choice for Beluga

Rich and creamy, the Beluga reveals its full depth on a Ratte potato purée with farm butter and crispy chips, or in the simplicity of a soft-boiled egg topped with smoked cream chantilly.

How to enjoy

To fully savour caviar, use a mother-of-pearl spoon and avoid metal which can alter its delicate flavours. Serve it chilled on a bed of ice, simply accompanied by a blini or light toast. Let each pearl melt on your tongue to reveal its iodized aromas, enhanced by a brut champagne or chilled vodka.
