Sevruga Caviar

The Sevruga sturgeon (starry sturgeon) is the smallest of the sturgeon species and was historically native to the Caspian Sea. Sevruga caviar is a rare, premium caviar with a delicate melt-in-the-mouth texture and intense briny notes, a creamy texture and a slightly buttery, nutty flavour, particularly prized by connoisseurs.

Unlike milder caviars, Sevruga has a distinctive personality and an exceptionally delicate structure:

  • The eggs are small, between 2.3 and 2.5 mm, with a very fine membrane and colours ranging from anthracite grey and jet black to pearl grey and light grey.
  • Texture: slightly buttery, Sevruga offers an immediate, silky melt that coats the palate.
  • Flavour and taste: a powerful, full-bodied opening with intense marine and briny notes, followed by a long finish revealing a creamy density and subtle nuances of butter and hazelnut.

Farming

Once the most widespread sturgeon species in the wild, Acipenser stellatus (also known as the starry sturgeon) is now classified as critically endangered. Sevruga caviar therefore mainly comes from aquaculture farms today. It remains rare because its farming takes several years. Extensive research led to the first successful spawning in aquaculture in 2011. It was not until 2019, after eight years of research and development, that Petrossian initiated the great return of Sevruga caviar, with its unmistakable melt-in-the-mouth texture, under the name Steluga®.

Tasting Tips

Sevruga caviar reveals its full potential when enjoyed on its own by the spoonful, or simply served on warm blinis. You can also savour it on a slice of buttered dark bread, accompanied by crisp radishes and young sorrel leaves. Sevruga caviar also pairs perfectly with the delicate flesh of a Fine de Claire oyster.
