The egg in many forms

Roe can be found in many different forms! Bottarga can be sliced and enjoyed on top of buttered toast or to season a risotto. Smoked cod roe, known as Maviar 1950®, can be enjoyed just like tarama thanks to its creaminess. We can also choose to grind Fleur de Maviar® (dried cod roe), a Petrossian innovation.
