Khabarovski® Smoked Trout, Fennel and Orange Salad

Prepare a healthy and flavourful plate with this delightful recipe for Caucasian-style Khabarovski® smoked trout, complemented by a refreshing fennel and orange salad and tarragon-infused sour cream.

 

Preparation time: 15 minutes

Serves 4 

 

Method

  1. Wash the fennel and the green apple.
  2. On a clean cutting board, segment the oranges, removing the peel, collect the juice in a bowl, and squeeze the remaining orange to extract as much juice as possible.
  3. Finely slice the fennel using a mandoline.
  4. Cut the apple into quarters, remove the core, and slice it thinly.
  5. Mix the orange juice with olive oil, season with salt and pepper.
  6. Combine the fennel with the oranges and green apple, season with salt and pepper.
  7. Chop the tarragon and mix it with the sour cream. Season lightly with salt.
  8. Serve the fennel salad on four plates, place a slice of Khabarovski® Trout on each one, and add a spoonful of tarragon sour cream.
