Itch, the Armenian Taboulé from the Petrossian Family

The Petrossian family presents a new family recipe. Passed down through generations, this Armenian tabbouleh recipe called “Itch” is simple and quick to prepare. We suggest this tabbouleh for your summer lunches or served in small glasses at aperitif with other specialties from the Armenian grocery.

 

Preparation: 10 minutes • Cooking: 15 minutes

Ingredients for 4 people

  • 1 small onion
  • 2 cups diced tomatoes (3 if not very juicy)
  • 2 teaspoons tomato paste
  • 1 glass of fine bulgur
  • 1 lemon
  • ½ bunch of parsley
  • Some spring onions
  • Olive oil
  • Salt

 

Method

  1. Sauté the onion.
  2. Add the diced tomatoes, then the tomato paste.
  3. Simmer for 15 minutes.
  4. Add the bulgur.
  5. Turn off the heat and let the bulgur soak in the hot tomato mixture.
  6. Squeeze the lemon and add the juice to the mixture.
  7. Add olive oil and salt.
  8. Chop the parsley and spring onions.
  9. Add them to the dish once cooled.
  10. Serve the Itch well chilled.

 

Suggestion: you can also add a little chopped mint and some sliced almonds before serving.
