Ingredients for 6 oysters
- 6 Gillardeau oysters n°1 or 2
- 125 g of Ossetra Tsar Impérial®
- 30 g hazelnuts
- 2 green apples
- The juice and zest of 1 lime
- A drizzle of olive oil
Method
- Toast the roughly chopped hazelnuts in a pan without adding fat. Remove from the heat once golden and let cool.
- Grate the zest and squeeze the lime.
- Peel and dice the apple, drizzle with lime juice and a little olive oil. Mix and keep in the fridge.
- Open the oysters, discard the first water and refrigerate.
- At serving time, place a spoonful of the green apple condiment in each oyster, add a generous quenelle of Ossetra caviar, sprinkle with hazelnuts and lime zest.
- Decorate with sprouts or fresh herbs of your choice.
