Description

Bottarga, also known as poutargue or bottarga, is part of the Mediterranean culinary heritage (Italy, Sardinia, Corsica). It is made from salted and dried mullet roe which is then coated in wax to stop maturation, giving it a unique texture and a very intense iodised flavour. This luxury product is frequently used by Michelin-starred chefs.

Naturally gluten-free, bottarga is not only delicious but also known for its health benefits, such as helping regulate cholesterol and supporting cardiovascular health.

How to eat bottarga?

It can be enjoyed simply as an aperitif, sliced with a drizzle of olive oil, on buttered bread, blinis with cream, or as a finishing touch on dishes such as risotto, pizza, baked eggs, or burrata.

Storage: Bottarga can be kept refrigerated for up to 90 days before opening, ideally between 0°C and 4°C. When protected by its natural wax coating, this layer plays an essential role in limiting oxidation and preventing the mullet roe from drying out, while preserving its flavour qualities. After opening, it is recommended to remove only the quantity needed for tasting and carefully return the bottarga to the refrigerator. To best preserve its aromas and texture, wrap it in cling film or store it in an airtight container. Under these conditions, it can generally be consumed within 7 to 10 days after opening. Like many exceptional seafood products, bottarga is sensitive to air and light. Prolonged exposure encourages oxidation, which may gradually alter its delicate aromas and characteristic colour. The use of a freezer is not recommended. Freezing may modify the texture of the pressed roe and diminish the aromatic finesse that makes bottarga so unique. For optimal tasting, remove the bottarga from the refrigerator a few minutes before serving so that it can fully express the richness of its flavours.
