Les Cocalières, Domaine d'Aupilhac is a Coteaux du Languedoc with notes of iodine, minerals, and white flowers. It also evokes hints of fennel and spices, providing subtle freshness and a delicate bitterness. Ideal to serve with the Coupe du Tsar® à la Caucasienne. The Fadat family, now in its 5th generation, cultivates local grape varieties—particularly Roussanne and Marsanne—using organic and biodynamic methods. As at Petrossian, meticulous attention is given to every product.

The Domaine d'Aupilhac, run by Sylvain and Désirée Fadat, practices organic and biodynamic farming. The Cocalières plot is a magnificent 10-hectare natural amphitheater situated at 350 meters altitude on clay-limestone soil. Deep roots reaching the bedrock give this wine its full character.
