Bottarga with black truffle is made from mullet roe which has been salted, dried by hand, and truffle flavoured. The amount of black truffle is perfectly balanced with the robust flavour of the bottarga. Thinly slice it with a mandolin, as you would a truffle, and enjoy it for aperitif or with a plate of pasta.
