• What is the difference between farmed salmon and wild salmon ?

The difference is both visual and in taste.

Wild salmon has a pale beige colour, while farmed salmon is pink-orange.

Baltic wild salmon feeds on pelagic fish such as herring and sprat. This diet gives it a very light, slightly pink flesh, earning it the nickname “Blond of the Baltic.”

For the same reasons, Baltic wild salmon has a more pronounced flavor than farmed salmon, with toasted notes and a slightly saltier mouthfeel.

The colour of farmed salmon results from a carefully controlled diet, ensuring a consistent balance of flavor.

Wild salmon, by contrast, may vary slightly in colour and taste depending on its life cycle.

Note that Petrossian salmon adheres to strict specifications, including a GMO-free diet and analytical monitoring for heavy metals, PCBs, and dioxins.

    • What is the country of origin of your salmon ?

Our farmed salmon (sliced and in Coupe du Tsar®) comes mainly from Scotland, but may occasionally come from Norway depending on fishing and local weather conditions.

Regardless of origin, all fish farms are carefully selected to ensure strong sea currents and strict compliance with Petrossian’s quality standards.

Our wild salmon is caught in the Baltic Sea, in a fishing zone stretching from Poland to Finland (excluding Russian territorial waters).

    • Which salmon should you choose?

If you enjoy a milder and more balanced taste, farmed salmon remains a safe choice, especially for dinners bringing together guests of all ages.

If you are looking for a salmon with a more pronounced flavour for a tasting among enthusiasts, we can guide you towards wild salmon.

    • How to serve and enjoy salmon ?

We recommend taking the salmon out of the refrigerator 5 to 10 minutes before serving. Salmon is delicious on its own and can be enjoyed plain or on toast. We advise against serving it with lemon juice, as it alters the appreciation of its flavour. To add a tangy touch, we suggest pairing it with a dill cream, to which you can add a hint of lemon.

    • How long does salmon keep?

Salmon can be stored in the refrigerator for up to 3 weeks, provided it remains in its vacuum-sealed packaging. Once opened, it should be enjoyed within 24 to 48 hours, kept in a closed container in the refrigerator.

    • Can I freeze salmon?

Farmed salmon can be frozen unless otherwise stated on the label. Wild salmon, however, cannot be frozen. As freezing is mandatory for wild fish intended to be sold raw or cold-smoked for sanitary reasons, wild salmon has therefore already been frozen.

    • Can I eat your salmon if I am pregnant?

As a precaution, we do not recommend that our pregnant customers consume raw or smoked fish. However, we can suggest our wild salmon roe or our taramas, which have been pasteurized.

    • Which recipes for salmon?

You can find various smoked salmon recipe ideas on our blog. To receive new themed inspirations, follow us on Facebook and Instagram or subscribe to our newsletter.

    • I’m looking for the best smoked salmon, which one should I choose?

If you’re looking for the best smoked salmon, go for Petrossian’s wild Baltic salmon. Hand-caught and traditionally smoked over beechwood, it offers pale flesh, a briny taste, and an intense smokiness that refined salmon lovers will appreciate.

Farmed salmon, also available at Petrossian, remains an excellent option for those who prefer a milder, balanced flavor that pairs easily as an appetizer or on toast.

For an exceptional tasting experience: wild salmon with pronounced flavor and traditional smoke.

For a convivial or milder meal: farmed salmon with delicate taste and tender texture.

    • Which smoked salmon to buy?

To choose a smoked salmon for a festive meal or a refined aperitif, Petrossian offers a range suitable for all tastes and occasions. Wild Baltic Smoked Salmon and Coupes du Tsar® represent excellence: firm flesh, delicate flavor, and artisanal wood smoking, perfect for impressing your guests. For those seeking a milder, less salty salmon, Hand-Sliced Smoked Salmon or Souhoï offer a tender texture and subtle taste. If you enjoy flavored variations, Dill Confit Smoked Salmon or Pasterma Smoked Salmon bring original and refined notes, while Hand-Sliced Organic Smoked Salmon combines quality with a responsible approach for organic product enthusiasts. Coupes du Tsar®, plain or with dill, are the noble part of the salmon, offering a premium tasting experience and elegant presentation for special occasions. Serve the salmon very fresh, on toasts, blinis, or brioche, optionally with crème fraîche, and pair it with brut champagne or chilled vodka to enhance its flavors. Allow about 50–70 g per person for an aperitif or brunch, and up to 100 g per person for a main course or festive meal. This Petrossian selection allows you to find the ideal smoked salmon according to your taste, texture, and presentation preferences.

    • What smoked salmon should you buy without risk?

To choose high-quality smoked salmon and limit risks (contaminants, poor storage, additives), it is essential to prioritize a properly labeled and well-processed product.

A good smoked salmon should clearly state its origin, species, and processing method. The safest products are generally those smoked over wood (beech, oak…) rather than treated with liquid smoke, which is often used in low-end industrial products. It is also recommended to choose dry-salted salmon, a more traditional method that avoids the injection of water or brine, which can alter the texture and quality of the fish.

From a food safety perspective, it is important to check the cold chain: smoked salmon must be stored between 0 and 4°C and consumed quickly after opening to limit microbiological risks (such as Listeria).

    • What type of smoked salmon is considered the best value for money ?

At Petrossian, the best value for money is generally found in hand-sliced farmed smoked salmon, which offers an excellent balance between finesse, consistency, and an accessible price considering the Maison’s expertise.

Unlike the most exclusive pieces (such as the Coupes du Tsar® or Baltic wild salmon), these farmed salmon focus on a supple texture, a mild taste, and a carefully controlled smoking process, while remaining in a more affordable range.

They mainly come from Scotland or Norway and benefit from a strict selection of farms as well as artisanal slicing. Within the Petrossian range, they therefore represent the best compromise for regular tasting or festive meals, without entering the ultra-premium category reserved for special occasions.

    • What are the best smoked salmon in terms of flavour and texture ?

The highest-rated smoked salmon in consumer tests stand out mainly for a firm yet melt-in-the-mouth texture, a well-balanced smoky/salty profile, and a consistent colour without excessive fat.

The most frequently cited references in recent rankings are salmon from Scotland and Norway, particularly certain Scottish smoked salmon, appreciated for their mild smoke and even texture, organic or Label Rouge versions, known for their consistency and finesse, and premium lightly smoked salmon that prioritise subtlety over intensity.

The best products are those that offer a good balance between softness, freshness, and gentle smoking.

    • What is the price of high-end smoked salmon?

High-end smoked salmon is generally priced significantly above mass-market products, as it relies on stricter fish selection, traditional dry salting, and slow, carefully controlled smoking.

In 2025, premium references are typically priced around €60 to €80 per kilogram on average, and can go higher depending on origin, cutting method, and producer expertise. Some gourmet houses or specialised delicatessens even offer pieces above this range for very rare selections or specific cuts. In fine gastronomy houses such as Petrossian, prices are even higher due to the level of selection and finishing. For example, premium farmed smoked salmon can range around €175 to €190 per kilogram, while exceptional wild smoked salmon can reach approximately €295 to €360 per kilogram.

This price difference is mainly explained by the rarity of the origin (wild vs farmed), maturation time, quality of raw material, and level of craftsmanship (hand slicing, whole fillets, etc.).

    • Can I eat caviar if I’m pregnant?

As a precaution, we do not recommend that our pregnant customers consume caviar.

However, we can suggest pasteurized alternatives such as our taramas or koshkas, including caviar tarama or our wild salmon roe.

    • What recipes can I make with caviar?

You will find various caviar recipe ideas on our blog. For new themed inspirations, follow us on Facebook and Instagram, or subscribe to our newsletter.

    • What should you drink with caviar?

The pairing of white vodka and caviar is an obvious choice — a perfect match in the purest Russian tradition, especially suitable for strong or briny caviars like Baïka®, Sevruga, or Ossetra Royal.

For milder caviars like Beluga, Daurenki®, or Ossetra Impérial, we recommend a lightly dosed champagne or white wines that offer a balanced mix of acidity and maturity to awaken the palate and let the roe release their subtle marine flavors and delicate notes of dried fruits.

Contrary to popular belief, non-dosage champagnes (brut nature) should be avoided, as their sharpness can overpower the caviar.

    • Which caviar should I choose for a first tasting?

Ossetra caviar? Baïka® Baeri? Sevruga Steluga®? Daurenki® or Beluga caviar?

To explore our different caviar types and find the one that suits your first tasting experience, we recommend reading the article Which Caviar to Choose?, which guides you through the unique characteristics of Petrossian caviars.

    • How long does your caviar keep?

Unopened, caviar can be kept in the refrigerator at 0–4 °C (32–39 °F) for about one month.

Once opened, it must be consumed within 24 hours, and stored in the fridge.

Caviar should never be frozen, as it would alter its texture.

    • How should caviar be served?

Caviar should be enjoyed using a special spoon (also known as a "palette") made of mother-of-pearl, stainless steel, or hardwood. Silver is to be avoided, as it can oxidize and alter the taste of the caviar.

Explore our curated selection of caviar serving accessories to enhance your tasting experience.

    • How should caviar be enjoyed?

Less is more! Caviar is best enjoyed on its own for a first tasting, or simply served on lightly buttered toast or blinis.

    • What are the origins of your caviars ?

Our caviar comes from various carefully selected farms around the world that strictly adhere to Petrossian’s quality standards. These partner farms are located:

      – In Europe, including France, Bulgaria, Italy, and Poland

      – In other regions such as South America, Asia, and Africa

You can find the specific origin of each caviar in its product description under “More product information.”

Immediately after harvesting, the caviar is shipped to Petrossian’s workshops in Paris, New York, and London, where our caviar experts begin the refinement and classification process. This maturation phase lasts from 3 to 12 months, depending on the caviar and the desired intensity of flavor.

This Petrossian know-how transforms a raw, salty caviar into one with developed, complex, and signature aromas, worthy of great caviar.

    • Can you buy caviar online safely?

Yes. Thanks to strict cold-chain control, buying caviar online is completely safe.

Every order is shipped in a refrigerated insulated box, ensuring ideal temperature throughout transport and preserving the quality of the grains right to your doorstep.

Our caviar is fully traceable, sourced from certified farms, and packaged according to the highest standards. You receive an authentic, carefully controlled product with optimal freshness.

Buying caviar online has never been so reliable:

guaranteed freshness, fast delivery, certified quality.

    • Is delivered caviar as fresh as the one bought in-store?

Our caviar is packaged at the source and shipped in a refrigerated insulated box to ensure perfect freshness, identical to what you would find in our boutique.

The cold chain is strictly monitored, and each tin is fully traceable to guarantee quality, safety, and optimal flavor.

You receive caviar that is just as fresh, pure, and delicate as if you had purchased it in-store.

    • How to open a tin of caviar?

Opening a tin of caviar is simple, but it should be done with the same delicacy as the product inside.

Use our caviar key: slide it under the rim and gently lift to break the seal effortlessly.

If you don’t have one, a coin or a small spoon can also be used to create a slight opening by carefully levering it.

To discover the ideal technique, you can watch our demonstration video.

    • Which caviar for a festive meal?

For a festive meal, it’s ideal to choose a caviar that is both refined, expressive, and suited to the moment you wish to create. At Petrossian, several selections are sure to impress your guests: Beluga Caviar, especially in the Tsar Impérial® version, is the most prestigious, with large grains and a creamy texture; perfect for an exceptional dinner. For a chic aperitif, Ossetra Tsar Impérial®, Baeri Baïka®, or Daurenki® Royal caviars offer a remarkable balance of finesse, intensity, and versatility. If you want to accompany a dish without overpowering its flavors, opt for more harmonious varieties such as Baeri Baïka® Royal or Ossetra Royal. For quantity, count about 15–20 g per person for a pure tasting, slightly less if the caviar accompanies a dish. Serve very fresh, on ice, with a mother-of-pearl spoon, and pair with brut champagne, chilled vodka, blinis, or brioche. Petrossian also offers festive gift sets including caviar, blinis, and accessories, perfect for enhancing a festive meal or giving an exceptional gift. Store caviar at 0–4°C and consume within 24 hours of opening to preserve its full delicacy.

    • Which caviar is the mildest / least salty?

Among caviars, the mildest and least salty are generally those whose maturation is carefully controlled to preserve the roundness of the grains and limit the briny intensity. At Petrossian, several selections stand out for their exceptional softness. Daurenki® Royal Caviar is often cited as one of the most delicate: its golden grains, supple texture, and slightly buttery flavor make it particularly approachable, perfect for those seeking a very mild, low-salt taste. Ossetra Tsar Impérial® Caviar also offers great harmony, with notes of dried fruit and perfectly controlled saltiness, giving an impression of smoothness on the palate. For an even finer experience, the “Tsar Impérial®” caviars are crafted in the Petrossian tradition, with precise aging that emphasizes elegance rather than power. Finally, Baeri Baïka® Royal, more straightforward but still moderate in salt, is a good option to discover a mild caviar without losing the product’s typical character. In all cases, a lightly salted caviar reveals its nuances best when served very fresh and enjoyed simply, with a spoon or on a neutral blini, to fully appreciate its natural mildness.

    • Which is the best caviar?

The best caviar is not necessarily the one with the most prestigious name, but the one that matches your taste and the experience you wish to have. At Petrossian, several varieties are renowned for their exceptional quality: Beluga Tsar Impérial®, with its large grains and creamy texture, is a prestigious caviar appreciated for its finesse and length on the palate. Ossetra Tsar Impérial®, with notes of dried fruit and subtle balance, appeals to those seeking a refined and elegant flavor, while Baeri Baïka® Royal or Daurenki® Royal offer milder, more approachable tastes, ideal for discovering caviar without excessive intensity. In reality, the “best” caviar is the one that gives you the most pleasure when tasting, whether powerful, briny, subtle, or creamy. Petrossian offers a varied range allowing you to choose according to your personal preferences, the moment of tasting, and pairing with dishes or aperitifs, turning every tasting into a unique experience.

    • Which foie gras should you choose?

The choice of foie gras mainly depends on the occasion and the desired tasting experience. For a gourmet gift, choose whole foie gras in a jar: elegant, easy to transport, and able to be stored for several years. For a festive meal or a special occasion, whole semi-cooked foie gras will appeal thanks to its melting texture and delicate aromas. Lovers of intense flavours will prefer duck foie gras, while those seeking finesse and refinement will favour goose foie gras. Finally, for an exceptional tasting experience, truffle foie gras combines the richness of foie gras with the incomparable notes of black truffle.

    • Which is the best foie gras: duck or goose?

There is no “best” foie gras between duck and goose: it mainly depends on individual taste and preferences.

Duck foie gras is the clear favorite in France, representing over 90% of the market. It is appreciated for its bold, generous and distinctive flavor, with a more rustic character that works perfectly for traditional festive meals.

Goose foie gras, rarer and more premium, offers a fine, delicate and subtle taste instead. Its texture is generally firmer. It is especially valued by those seeking elegance and refinement.

In reality, the choice between the two depends mostly on the desired tasting experience: intensity and conviviality with duck, or finesse and delicacy with goose.

    • What is semi-cooked foie gras?

Semi-cooked foie gras is foie gras that has been pasteurised at a low temperature (between 80°C and 85°C), allowing it to retain an exceptionally smooth texture and delicate aromas. It is best enjoyed slightly chilled, accompanied by country bread or brioche. Stored in a refrigerator between 0°C and 4°C, it can be kept for several weeks to several months before opening, and for 2 to 3 days after opening. At Petrossian, this category notably includes whole semi-cooked duck and goose foie gras, as well as selected gastronomic creations made from exclusive recipes, including the truffle foie gras dome.

    • Is the foie gras delivered under proper cold-chain conditions?

Yes, the delivery of semi-cooked foie gras and even canned foie gras strictly respects the cold chain thanks to certified logistics solutions.

Fresh product shipments are handled by our logistics partner Chronofresh (Chronopost group), which guarantees a temperature maintained between 0°C and 4°C from the production facility to the customer’s home, with real-time temperature monitoring.

    • How much foie gras should you plan per person?

On average, the amount of foie gras per person depends on its role in the menu and the type of serving.

As a starter (whole or semi-cooked foie gras): plan between 50 and 70 grams per guest.

As an appetizer (on toast): around 30 to 40 grams per person, meaning 3 to 4 toasts of 10 grams each.

As a main course (pan-seared raw foie gras): 1 to 2 nice slices of about 40 grams, so 40 to 80 grams per person.

Some adjustments may be useful depending on the context:

If you are serving goose foie gras, which is finer and richer, portions can be slightly reduced to around 40 to 50 grams as a starter, as it is more filling than duck foie gras.

The composition of the menu also matters: for a particularly rich festive meal (stuffed turkey, multiple side dishes), it is advisable to stay on the lower range, around 50 grams. Conversely, if the starter is lighter, for example served with a baby leaf salad, the portion can go up to 70 grams.

Finally, a waste-reduction tip is to prefer clean, generous slices rather than overly thin or crumbled pieces. Foie gras keeps very well for 2 to 3 days in the refrigerator after opening, provided it is carefully wrapped in cling film.

    • Which foie gras should you offer to a gastronomy lover / a fine gourmet?

The first choice is Whole Semi-Cooked Goose Foie Gras (the purists’ choice). A true benchmark of haute gastronomy, it is prized for its particularly velvety texture and its aromatic complexity, which unfolds slowly and elegantly on the finish. It is best chosen semi-cooked, therefore fresh, as this preparation method preserves all its finesse and gives it an even more delicate smoothness than the canned version.

Next comes Duck Foie Gras “cooked in a cloth” (cuit au torchon), a traditional and demanding preparation. The whole liver is carefully wrapped in a cloth before being gently poached in a subtly flavored vegetable or poultry stock. This cooking method gives it a perfectly cylindrical shape, ideal for even slices worthy of fine dining tables. The foie gras slowly absorbs the aromas of the broth, resulting in an extremely refined texture and remarkable smoothness.

Finally, Truffle Foie Gras with Black Truffle (the height of luxury) stands out for its exclusive use of real Tuber melanosporum, and not artificial flavorings, at a minimum of 3% to qualify as “truffled”. The combination of the richness of duck foie gras and the aromatic power of black truffle makes it an essential festive delicacy and a true peak of gastronomic refinement.

    • How does semi-cooked foie gras compare to canned foie gras?

Semi-cooked foie gras is pasteurized at a low temperature (between 80°C and 85°C), a process that preserves the natural fat delicacy of the liver. The result is a particularly melt-in-the-mouth texture and subtle, refined aromas. It must be stored in the refrigerator (between 0°C and 4°C) for a few weeks to a few months and requires strict cold-chain transport and storage.

Canned foie gras, on the other hand, is sterilized at high temperature (above 100°C). This method gives it a firmer texture and a more pronounced terroir flavor. It can be stored for several years at room temperature and actually improves with time. Connoisseurs often age it for 6 months to 1 year before tasting to fully develop its aromas.

    • Where can you buy artisanal foie gras online?

To buy authentic artisanal foie gras online, it is recommended to prioritize producers’ e-commerce stores or high-end gourmet delicatessen shops.

These short supply chains help guarantee the authenticity and quality of the product, directly from artisanal know-how, without unnecessary intermediaries or additional margins.

For fresh products, make sure the website offers cold-chain delivery, ideally via specialized services such as Chronofresh, in order to preserve all the qualities of the foie gras until it is received.

Buying directly from the artisan or from a reputable house online therefore remains the best guarantee of enjoying an exceptional product, carefully prepared and perfectly preserved.
