Description

Discover the Pata Negra Bellota selected by Petrossian, an exceptional Iberian ham renowned for the power and complexity of its aromas. It comes from Iberian pigs raised in free-range conditions and fed mainly on acorns (“bellota”). This ham develops a delicately marbled, juicy and intensely flavourful flesh.

Its very long ageing in cellar enhances its texture and reveals deep notes of hazelnut, dried fruits and terroir, making it one of the most prestigious hams in the world.

Iberico ham vs Serrano ham

Iberico ham (Pata Negra) comes exclusively from Iberian pigs, often raised free-range and fed on acorns. This unique diet creates a natural marbling of fat and an incomparable aromatic richness, with a melting and complex texture.

Serrano ham, on the other hand, comes from standard white pigs. Its ageing is generally shorter and its flavour simpler, saltier and less complex. It remains an excellent traditional ham, but without the aromatic depth or melt-in-the-mouth texture of Pata Negra Bellota.
