This Pata Negra Bellota ham is one of a kind thanks to its strong, complex aromas. It has an amazingly juicy texture and a very distinctive taste. Raised in the open air, this mountainous region of Portugal is especially favourable to Pata Negra pigs. During a large part of the year, they live freely while feasting upon acorns. At Barrancos, the art of drying and maturing meat is part of the tradition. The long ageing period magnifies the amazing quality of the meat and its unforgettable aromas.
