La Maison du Chocolat’s Insolite Collection embodies the innovative and inquisitive spirit of its Chef, Nicolas Cloiseau. The ambition? To pair unexpected ingredients with the world of praline or ganache, thus creating sensorially surprising and balanced experiences.
After daring editions, such as oyster-extract ganache or Madras curry pralines, Cloiseau now explores a new gustatory dimension by pairing the caramelized sweetness of almonds and hazelnuts with the subtle iodized notes of caviar, composing eight exceptional pralines.
