Horseradish is a perennial plant from the Brassica family, cultivated for its root that is used in cooking. The grated horseradish root is used as as condiment (especially as a substitute for mustard). It has a very strong flavour that's spicy and peppery. Horseradish is perfect with all types of cold, raw, or smoked fish, and is delicious when mixed with crème fraîche.
