Bortch

Borscht (or borshch) is an iconic soup originating from Eastern Europe, particularly associated with Russian, Ukrainian and Slavic cuisines. Its key ingredient is beetroot, which gives it its deep red colour and its slightly sweet and tangy flavour. Historically, borscht was a peasant dish made with seasonal vegetables, before becoming a staple of Eastern European fine dining tables.
