Description

Borscht (or borshch) is an iconic soup originating from Eastern Europe, particularly associated with Russian, Ukrainian and Slavic cuisines. Its key ingredient is beetroot, which gives it its deep red colour and its slightly sweet and tangy flavour. Historically, borscht was a peasant dish made with seasonal vegetables, before becoming a staple of Eastern European fine dining tables. Over time, it developed many regional variations and is now considered a culinary symbol of conviviality and tradition.

Borscht can be enjoyed as a starter or a light main course. It is even better after a few hours of resting, once the flavours have fully developed. It can also be enriched according to tradition with meat, smoked fish or gourmet delicacies from Petrossian fine food selection.
