Fluffy pancakes with smoked salmon

The pancake is an essential part of brunch, and can be prepared in an infinite number of ways. For a soft, light version, try this recipe for fluffy pancakes made out of egg whites which have been whisked until firm, and then cooked at a low temperature. Garnish with a fresh herb fromage frais and smoked salmon.


Preparation time: 20 minutes – Cooking time: 10 minutes

Ingredients for 4 people

For the pancakes

  • 100g flour
  • 1 sachet (11g) of baking powder
  • 2 egg yolks
  • 4 egg whites
  • 20cl milk
  • 5g sugar
  • 1 pinch of salt


For the topping



For the fluffy pancakes 

  1. In a bowl, mix together the egg yolks, milk and flour until smooth.
  2. Beat the egg whites until stiff with a pinch of salt.
  3. Add the baking powder and sugar little by little, and then whisk until stiff.
  4. Slowly add the egg whites to the mixture with the egg yolks.
  5. Put a ¼ of the mixture in a non-stick frying pan (do not add any fat).
  6. Cover and cook over a very low heat making sure not to turn the pancakes over. To check that they are cooked, put a knife into one of the pancakes. The blade should come out clean.


For the topping

  1. Finely chop the fresh herbs.
  2. Beat the fromage frais with the fresh herbs, then season with salt and pepper.
  3. Place a spoonful of the herb cream on each pancake, and then add a slice of smoked salmon.
  4. Serve immediately and enjoy!
