Choose the right amount depending on the occasion and context.
If you’re discovering caviar for the first time or planning a tasting, count 15 to 20 grams per person. To truly appreciate this rare and refined product, enjoy it simply from the spoon — without any other flavors, so you can savor its full delicacy. You can also serve it on blinis with a small knob of unsalted butter.
If you’re already a caviar lover and wish to serve it as a starter, 20 to 30 grams per person is the perfect amount.
For a main course, plan for 60 to 70 grams per person.
Don’t forget to let the caviar warm slightly before serving: it should ideally be served at 8 to 9°C (46–48°F). Take it out of the refrigerator about 10 minutes before eating.
