Ingredients for 2 people
- 125 g Daurenki® caviar
- 500 g Ratte potatoes
- 100 g butter
- 10 cl milk
- 1 lemon
- ½ bunch chives
- Salt, pepper
Instructions
- Peel the potatoes, cut into cubes, and rinse.
- Place potatoes in a pot, cover with cold water, add coarse salt, bring to a boil and cook for about 15 minutes.
- Once cooked (check with a knife), drain the potatoes.
- Mash the potatoes using a potato masher or ricer, return to the pot and stir over low heat to dry slightly.
- Add butter cubes and previously warmed milk. Mix well.
- Grate the lemon zest, finely chop the chives, and fold into the mash. Season with salt and pepper.
- Using a heart-shaped cookie cutter, plate the mashed potatoes.
- Top with a generous spoonful of caviar.
- Serve immediately.
