For Valentine’s Day, make aphrodisiac lemon cookies with candied ginger slices. Sweet and slightly spicy, these cookies are sure to delight sweet tooths at teatime.
Preparation: 10 minutes • Baking: 12 minutes • Rest: 3 hours
Ingredients for about 40 cookies
- 150 g soft butter
- 160 g sugar
- 1 large egg
- 250 g flour
- 80 g candied ginger slices
- 2 pinches fleur de sel
- 1 untreated lemon
Instructions
- Cut the candied ginger slices into small cubes.
- Wash, dry, and finely zest the lemon.
- Whisk the butter with the sugar for 2 minutes.
- Add the egg and whisk again.
- Add flour and salt.
- Work the dough until homogeneous, then mix in ginger and zest.
- Form a dough ball, roll between two sheets of parchment to 2–3 mm thickness, and chill for 3 hours.
- Preheat the oven to 160°C.
- Roll out the dough, cut heart shapes with cookie cutters, and place on a parchment-lined baking sheet.
- Bake for 10–12 minutes.
- Remove from oven and let cool.
- Store in an airtight or metal box.
