Sablés au citron et gingembre confit

Lemon and candied ginger shortbreads

For Valentine’s Day, make aphrodisiac lemon cookies with candied ginger slices. Sweet and slightly spicy, these cookies are sure to delight sweet tooths at teatime.

 

Preparation: 10 minutes • Baking: 12 minutes • Rest: 3 hours

Ingredients for about 40 cookies

  • 150 g soft butter
  • 160 g sugar
  • 1 large egg
  • 250 g flour
  • 80 g candied ginger slices
  • 2 pinches fleur de sel
  • 1 untreated lemon

Instructions

  1. Cut the candied ginger slices into small cubes.
  2. Wash, dry, and finely zest the lemon.
  3. Whisk the butter with the sugar for 2 minutes.
  4. Add the egg and whisk again.
  5. Add flour and salt.
  6. Work the dough until homogeneous, then mix in ginger and zest.
  7. Form a dough ball, roll between two sheets of parchment to 2–3 mm thickness, and chill for 3 hours.
  8. Preheat the oven to 160°C.
  9. Roll out the dough, cut heart shapes with cookie cutters, and place on a parchment-lined baking sheet.
  10. Bake for 10–12 minutes.
  11. Remove from oven and let cool.
  12. Store in an airtight or metal box.
