Here are some general guidelines that will help you discover which caviar best matches your flavour preferences. Daurenki™ has balanced, briny notes with a nutty aroma. Baïka™ has a strong first taste with a very lightly briny yet full-bodied flavour, punctuated by a dominant fruitiness. Ossetra often has a nutty aroma with flavours of the sea and a strong, briny finish. Finally, Beluga has a very buttery flavour that's quite fatty, highlighted by notes of hazelnut and egg, and has a lovely, long finish.
