White Pizza with Black Truffle

Black truffle pizza requires neither complicated ingredients (your pantry staples will do) nor resting time thanks to its "flatbread" base. It can be prepared in just a few steps! The truffle specialties give this pizza a festive and gourmet touch.

Ingredients for the dough

  • 250 g Greek yogurt (2 pots)
  • 150 g wheat flour + a little for rolling
  • 2 tsp baking powder

Method

For the topping

  1. Peel and slice the potatoes thinly.
  2. Fry them in a little oil until golden, then drain on paper towels.

 

For the dough

  1. Mix yogurt, flour, and baking powder by hand. The texture should not be too soft; add a little flour if necessary.
  2. On a floured surface, divide the dough into 4 portions and roll each piece thinly.

 

For cooking

  1. Cook each dough disc in a lightly oiled pan for 2 minutes on each side.
  2. When still hot, spread 1 tbsp of crème fraîche, add thin slices of golden potatoes, and ¼ of the goat cheese in small pieces.
  3. Finish with black truffle shavings and a few drops of black truffle oil.
  4. Season with salt and pepper, add a few arugula leaves, and serve immediately.

 

Mikaël Petrossian’s Tip

You can replace wheat flour with whole wheat or chickpea flour to make the flatbread. Season the pizza with Fleur de Caviar®, a dried caviar to grind, for a delicate iodized touch.
