Rybaloff™ caviar bottarga is the latest creation that's made solely from caviar eggs. Constantly at the cutting edge of innovation in seafood products, Petrossian has used its expertise in bottarga to create a new product using its signature speciality: caviar. Mullet eggs from the traditional recipe are replaced with caviar eggs sorted according to their texture, generous size, and full-bodied aroma. After several months of ageing followed by a slow, controlled drying process, the Rybaloff™ caviar bottarga was born. Cloaked in a coat of beeswax to keep its flavours and finesse intact, it can be enjoyed simply drizzled with olive oil, in thin slices on top of risotto or scrambled eggs, or grated on top of pasta or salad. This caviar bottarga is sold in its natural wood casing and is available in two formats: 20 g or 80 g.
