Why is truffle so precious?
Tuber melanosporum (black truffle) or aestivum (white truffle) is a rare mushroom. It is typically harvested in Dordogne / Périgord, only from autumn to early spring. Its delicate hand-picking requires expertise, and truffle trees are not easy to find. Fresh truffles are selected based on strict criteria of scent and size.
