Ingredients for 4 people
- 250 g quinoa
- 200 g smoked salmon
- ½ cucumber
- 1 avocado
- 1 small handful of cherry tomatoes
- ½ red onion
- 1 lemon
- 3 tablespoons olive oil
- A few sprigs of dill
- A few mint leaves
- Salt
- Pepper
Preparation
For the quinoa
- Rinse the quinoa thoroughly under cold water.
- Cook it in a saucepan of salted water according to the packet instructions, usually for 12 to 15 minutes.
- Drain it and leave it to cool completely.
- Fluff it with a fork.
For the salad
- Cut the cucumber and avocado into small dice.
- Halve the cherry tomatoes.
- Finely slice the red onion.
- Cut the smoked salmon into strips.
- Mix the cooled quinoa with the vegetables, fresh herbs and smoked salmon.
For the dressing
- Squeeze the lemon.
- Mix the lemon juice with the olive oil.
- Season lightly with salt and pepper.
- Pour the dressing over the salad and mix gently.
For serving
- Divide the quinoa salad between the plates or serve it in a large dish.
- Add a few mint and dill leaves.
- Serve well chilled.
Preparation tip
The quinoa can be cooked in advance and stored in the refrigerator. Add the avocado and smoked salmon just before serving to best preserve their texture and freshness.
