As for truffle juice, if cooked and vacuum-packed, it can be stored up to 12 months at room temperature before opening.

Yes, fresh truffles can be frozen for 6 to 8 months.
Do frozen truffles maintain quality?
Freezing fresh truffles does not change the taste, but their aromatic intensity diminishes. Cooked and vacuum-packed truffles maintain their quality for up to 1 year.
How to freeze truffles?
Do not wash them beforehand. Place them in a vacuum container. To thaw, place them in the refrigerator to maintain the cold chain and prevent bacteria. You can also grate them frozen on the day of preparation or consumption. Note: truffles cannot be refrozen.
How long can fresh truffles be kept in the fridge?
Fresh truffles usually last 5 to 10 days in the refrigerator, depending on maturity and storage conditions. The more mature they are, the sooner they should be consumed (ideally within 5 days).
