Bottarga with black truffle is made from mullet roe which has been salted and dried by hand, and 8% black truffle (Tuber Melanosporum). The amount of black truffle is perfectly balanced with the robust flavour of the bottarga. Thinly slice it with a mandolin, as you would a truffle, and enjoy it for aperitif or with a plate of pasta.
