Classic Salmon Poke Bowl

Enjoy this Salmon Coupe du Tsar® Poke Bowl as a healthy and indulgent little treat. This recipe brings the colors of Spring to your plate.

Preparation: 15 minutes – Cooking: 20 minutes

Ingredients for 4 poke bowls

For the rice (Japanese chirashi style)

  • 200 g Japanese short-grain rice
  • 22 cl water
  • 6 g granulated sugar
  • 3 cl rice vinegar
  • 3 g fine salt

Method

For the rice

  1. Wash the rice several times with clear water, drain, and place in a saucepan.
  2. Add water to cover, cover with a lid, and bring to a boil.
  3. Immediately reduce heat and simmer for 12 minutes.
  4. Turn off the heat and let rest for 12 more minutes.
  5. Spread rice in a large dish, pour over the mixture of rice vinegar, salt, and sugar. Mix gently and let cool to room temperature.

When serving

    1. Slice the salmon evenly, about 5 mm thick.
    2. Slice your chosen garnish thinly using a mandoline.
    3. Place the cooled rice in individual bowls, top with salmon slices.
    4. Decorate with the chosen garnish and serve with neutral or yuzu-flavored soy sauce.

Which salmon to choose?

The first choice is the classic Coupe du Tsar for its mild flavor that pairs perfectly with vinegared rice. You can also vary the colors, flavors, and textures in your bowl with plain salmon, dill-marinated salmon, spice-marinated smoked salmon, or aged salmon.
